Berry Antioxidant Elixir: A High-Fiber Mocktail
Ingredients:
- 1 cup raspberries (rich in vitamins, minerals, powerful antioxidants, and fiber) 
- 1 cup blackberries (also packed with vitamins, minerals, powerful antioxidants, and fiber) 
- 1 tablespoon chia seeds (an excellent source of fiber and omega-3 fatty acids) 
- Fresh mint leaves (for a refreshing touch and added antioxidants) 
- 1 lime (packed with vitamin C) 
- 1 tablespoon stevia or monk fruit sweetener (adjust to taste) 
- Sparkling water or club soda 
- Ice cubes 
Instructions:
- In a bowl, muddle the raspberries, blackberries, and the juice of one lime together. Aim to crush the berries to release their juices and unleash their antioxidant powers. 
- Add the chia seeds to the berry mixture and let it sit for about 10-15 minutes. The chia seeds will begin to gel, adding thickness and more fiber to the mocktail. 
- In a glass, add a few mint leaves and muddle them slightly to release their flavor and antioxidants. 
- Fill the glass with ice cubes. 
- Pour the berry and chia seed mixture over the ice, filling the glass to about two-thirds full. 
- Add the stevia or monk fruit sweetener and stir well. 
- Top off with sparkling water or club soda, and give it a gentle stir. 
- Garnish with a few fresh berries and a sprig of mint for an extra antioxidant boost.
